Walnut and Chocolate Chip Cookies!!

So, I used a recipe from Healthy Happy Life (an ace vegan blog), to make these cookies:-

I made them for a yoga retreat that I went on this weekend. I helped out with the cooking, so my yoga teacher asked me to make a snack for everyone to have on the Friday afternoon. I was originally going to make flapjacks, but in the end made cookies instead. I had been browsing blogs on Wednesday when I came across this great recipe for walnut and chocolate chip cookies. They looked so good, and thought if they turned out right, this could be great for baking and bringing along for the retreat.


 

You can check out the recipe on the above mentioned blog. I slightly altered the recipe, these were my alterations:-

-used chopped mixed nuts as well as a few walnuts, as this was cheaper for me

-decided to use egg relacer instead of flaxseeds, (even though I discovered that I did in fact buy flaxseeds, but had forgotten!) I used the equivalent of one and a half eggs.

-used a bit more choc chips than the recipe said
-I substituted some of the sugar for agave syrup (which I added in with the liquid)

My cookies didn't turn out quite like the ones shown on Kathy's blog, but they were really yummy. I was a little worried that people wouldn't like them, but most people said they really liked them, so it turned out great!

I accidentally made the first batch without turning on the timer so slightly over-cooked them. The second batch were a lot better, but none of them came out crispy at all. This may have been down to using the egg replacer and not quite getting the consistency of the cookie dough quite right; it could have also been due to the fact that I needed to use more walnuts. Also, I think I should have made them a bit smaller. I will definitely try and make these again. That's if I can stop myself from eating all the chocolate chips.....

  1. They look nice! I love nuts and chocolate and biscuits so this all sounds like a winning combination hehe :) I'd be interested to see how they come out another time. Hope your yoga retreat was good!

    1. hi Urban Lake- thanks for your comment! I baked them again and made them thinner to try and get them crispier, but unfortunately, I think they were too thin as some of them burned on the bottom. I also tried using the 'flax egg' instead of the egg replacer. I couldn't really tell the difference in terms of taste. My retreat was lovely, thanks. :)
